Sometimes weekend morning breakfasts call for a little something special because most of us have a little more time on either Saturday or Sunday mornings to indulge ourselves.  Frozen pancakes and waffles are aplenty, but there are also easy mixes that require one or two ingredients that elevate pancakes to a whole new level.  My Sunday morning favorites so far are: Kerbey Lane's Gingerbread Pancake Mix, Kerbey Lane's Lemon Poppy Seed Pancake Mix,and Trader Joe's Toasted Coconut Pancake Mix.   

Kerbey Lane is a famous pancake house in Austin Texas.  People will wait for hours in line on weekend mornings to get in the door.  You bet I was doing my happy dance on aisle 9 at my local store when I realized that they were carrying the famous pancake mix.  

Gingerbread is a flavor that I usually indulge in enormous amounts around the holidays, but I have to admit that I am indulging year round now.  My children will be in dismay when I write that Kerbey Lane's Gingerbread pancake mix is the bomb!  For those of you who are avoiding gluten, no worries because they are gluten free.  You only need to add water and an egg then let the batter sit for 5 minutes.  They are pure goodness with the rich flavor of gingerbread. This is my new Thanksgiving morning breakfast.  My friend (shout out to Betsy) enjoys hers with blueberries in the mix. For those of you who are talented in pancake art, pancakes in the shape of a gingerbread man are sure to please.   Use whipped cream or white icing to complete the look.  The box costs $3.75 and includes directions for muffins and waffles.

I wonder who discovered that lemons and poppy seeds go so well together?  This Lemon Poppy Seed pancake mix is very easy, as it only requires you to add water and an egg and let it sit for 3 minutes.  They are lemony smooth with the lovely texture of poppy seeds to compliment the lemon.  A summer favorite! The box cost $3.75 and includes directions for muffins and waffles.  A 

 I found both of the Kerbey Lane pancake mixes at my local HEB, but according to the Kerbey Lane website, they are available at Whole Foods.  If you don't have either store near you,  no worries, you can order the pancake mixes directly from Kerbey Lane's online store at http://kerbeylanecafe.com/

UPDATE 8/12/24: Dang it! The Coconut Pancake Mix is no longer available! Trader Joe's Toasted Coconut Pancake Mix is a coconut lover's dream.  All you have to do is add water and it will only take minutes for you to think you are enjoying breakfast on a tropical island. This pancake mix has some serious coconut in it.  The box cost $3.69 and is available at Trader Joe's.  I have created my own pina colada pancakes using this pancake mix.  

Tess's Pina Colada Pancakes:

  • Trader Joe's Toasted Coconut Pancake Mix

  • Small Can Crushed Pineapple

  • Rum

Prepare the pancake mix according to directions omitting 1 Tbsp of water.  Add 1/4 cup of crushed pineapple (drained) into the mix, blend and then add  2 tsp of rum, blend again. Enjoy outside or next to a window while you imagine that you are on a tropical island!
